The Naga King Chilli - Naga Morich

This strain of Naga Morich is straight from the hills surrounding Nagaland where it was tasted by Gordon Ramsay on his Great Escapes programme for Channel 4 television. Gordon Ramsey visited a village of one of the famous Naga Warrior Tribes in his latest show. The Naga Morich 'snake or serpent chilli' is one of the world's most respected hot chilli peppers.  The Nagaland government has finally won the patent rights for the Naga King Chilli and also registered as the proprietor of the chilli with the Government of India, according to the Geographical Indication Registry recently.

In Nagaland it is grown in districts of Kohima, Mon and Peren. Traditionally chilli is being grown for green fruits during summer months in the upland jhum paddy fields. Its fruits form an essential ingredient of the Naga kitchen cuisine. The plant grows at the height of 120 cm bearing up to 150 fruits. The flowers are white, 2-3 at a node, and fruits are blood red in colour, conical measures about two inches in length and a half-inch width. Heat Value 1,041,427 Scoville Heat Unit. The people of Nagaland have been eating it for decades. Due to its extra-ordinary pungency level and irritating properties it has also been used as lachrymatory agent (a chemical compound that irritates the eyes to cause tears, pain, and even temporary blindness). Nagas are known to have used this chilli as a biological weapon in ancient warfare to get rid of enemies and also used it to smoke out foxes and rodents in their fields. 

Naga King Chilli Heat

The heat of chillies is due to the presence of a group of seven closely related compounds called capsainoids, but capsaicin (8-methyl-N-vanillyl-6-nonenamide) and dihydrocapsaicin are responsible for approximately 90% of the pungency.  The Naga Morich has a high percent of these two compounds.

We hope this yellow Bhut Jolokia is a mutation and not a cross pollinated variety.  The Chile Pepper Institute explained to us that a mutation is actually better than a cross as it allows the original chilli to remain potent and unchanged in flavour and shape. The chilli will have a pungency level similar to the red Bhut Jolokia. We will not know until this lot of seeds is harvested and grown. Chiltepin

The Chiltepin/Tepin can be over wintered and re grown the following season. Referred to as the "mother of all hot peppers" some say the chiltepin is even hotter than the Habanero. These tiny chillis can be dried and crumbled on top of food or added to soups, stews, salsas, chorizo or any dish where some heat and flavour is appropriate. Chiltepin are hard to find and hand harvested. Chiltepins are one of the few crops in the world which are harvested in the wild rather than cultivated. Extremely rare hot chilli from the Caribbean. The irregular shape, thin pods have an excellent flavour and are similar in heat, if not hotter than the record Holder.  7 Pod / 7 Pot Chilli Seeds

The 7 Pod (sometimes called 7 Pot, as in 1 pod will spice seven pots of stew.) is a Chinense variety from Trinidad. This variety is matched for heat by just a small number of other Chinense varieties, namely the Bhut Jolokia, Bih Jolokia, the Dorset Naga/Naga Morich, and the Trinidad Scorpion (see above). The texture of the peppers is very different to your average capsicum. Rather than the smooth, shiny surface of most peppers, the 7 pod has an almost paper-y texture and pods start lime green rather than the usual dark green. Seeds have been grown in Trinidad and not isolated so some cross pollination is possible and pure strain 7 pod cannot be guaranteed. Having said that, a 7 pod cross would be an even rarer hot pepper so don't let that put you off trying this great variety.

We have recently completed trials germinating a selection of our very hot chilli seeds. We grew a tray with seeds soaked in our germination solution and a tray without and found a 50% increase in germination success rate.

Some hot chilli seeds can be tricky to germinate and do benefit from the germination solution and a germination temperature of between 80°F and 89°F. The pepper flowers also benefit from hand pollination with a paint brush. Our germination solution is available to help you get the best from germinating your hot seeds.

The Ancho pepper provides an authentic flavour to Mexican cooking.  Easy to grow and dry, perfect to have in the kitchen for all types of cooking because these peppers are not hot.  Grown in Mexico, Anchos are common to Mexican and South-western cooking.  Anchos have a mild, sweet, fruity flavour. Ancho is the most commonly used dried chilli in Mexico. An Ancho is a dried Poblano Pepper and often is mislabelled as a Pasilla or Mulato pepper. Anchos can be used as a substitute for Guajillo or Pasilla Negro and visa versa. These chillies have the same heat range and flavour profile. Ancho, Pasilla and Guajillo form the Holy Trinity of chiles used to prepare traditional mole sauces.

NuMex Suave Orange

Now this is a really special chilli pepper, back in stock by popular demand. Breed by the Chile Pepper Institute for people that enjoy the fantastic flavour of Habañero but not that much heat.

This chilli is the same family as a Habanero, Capsicum Chinense. The word "suave" is Spanish for mellow, smooth or mild. The Red Savina measures 577,000 SHUs, the hottest in the world and the Orange Suave measures 835 SHUs. The Chile Pepper Institute have developed these two chillies with all the flavours of the Habanero but less heat. These are must have chillies for cooks who like the taste of the Habanero. Capsicum Chinense have unique flavours but most people can not taste them because of the heat. The Suaves have a citrus like flavour with an orange lemony overtone with an apricot aroma.

The heat is in the back of the mouth and throat and not on the lips and tongue. Each plant can yield up to 100 fruits. (Capsicum Chinense)

This striking and very useful hot chilli from Assam an area in India close to the famous city of Tezpur, renowned for bringing us some of the hot varieties of chillies around. The chilli has a cited heat level of 855,000 SHU but it is very doubtful it holds this much heat!!!!  Probably it would be closer to 100,000 SHU if, that. Lots of pepper seed suppliers call it Naga Jolokia by mistake.  According to our informed local experts, the chilli tested with a heat level of 855,000 SHU was actually the Bhut Jolokia which in some parts of India is called Naga Jolokia, Naga being an area and Jolokia meaning Pepper or chilli.  This was the hot chilli tested with a recorded heat level of 855,000 SHU.  Indian PC-1 is a Capsicum annuum. As you can see from the photographs, the Indian PC-1 chilli (AMKA also mistakenly known as the Naga Jolokia) actually bears no resemblance to the Capsicum Chinense family to which all the hottest varieties belong. This is no reason not to grow it but please do not mistake it for the similarly named but much hotter Bhut/Bih Jolokia.
